A fine dining manager has to work with the hotel chef and other employees in maintaining the restaurant/hotel, purchasing of provisions and supplies, preparation of menus on a daily basis, maintaining a clean and hygiene environment and estimate the costs of food and beverages. As far as the preparation of food items is concerned, he or she should ensure that there is a minimum wastage.

A fine dining manager is responsible for supervising the works at the bar and the restaurant/hotel and see that the profit is maximised and the wastage/expense minimised. With the assistance of manager and other employees, the fine dining manager has to look after the plans for marketing, advertising and organising special functions and events.

A fine dining manager is also responsible for providing training to the existing staff and the new hires regarding the customer services, how to serve food and beverages and appraise them of the rules and regulations to be followed, while on duty, as laid down by the Government. He or she has to receive the complaints from the customers concerning food and quality and service provided and must do the needful to rectify the defects and increase the quality in all aspects. He or she should also ensure that sanitary practices are strictly followed in the entire premises of the hotel/restaurant.
